Ingredients
- 1 can of 100% pumpkin puree (no sugar added)
- 2 cups flour
- ⅓ cup applesauce
- ⅓ cup almond milk (or whichever milk you prefer)
- ¼ cup pepitas (unsalted pumpkin seeds)
- 6 Tbsp maple syrup
- 3 Tbsp cinnamon
- 2 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350 degrees.
- In a large bowl, combine your flour, sugar, baking soda, cinnamon, salt, and baking powder.
- Next, add your pumpkin puree, applesauce, milk, and vanilla extract.
- Mix everything together until your batter is smooth and clump-free.
- Lightly coat your muffin tin with cooking oil. You can also use paper muffin liners.
- Add the pumpkin batter to your muffin tin, filling each cup to the rim.
