Ever been in a “recipe rut?”
You know, when you start buying the same groceries everytime you shop…
And soon enough — you’re eating the same thing nearly every single day?
Well, for the past few months, my “recipe rut” always seems to hit during lunch time.
(Seriously — I don’t know HOW many days in a row I ate the same exact meal!)
Because I think you’ll agree:
Stopping in the middle of your day to prep, cook, and eat a full meal, start to finish, can feel like a BIG task.
That’s why recently, I’ve been relying on my Mason Jar Instant Noodle Soup for a little variety during lunchtime.
See, not only are they a delicious, pre-prepared lunch that’s perfect for when you’re in a time crunch…
They’re SUPER customizable — and can be changed easily to avoid any recipe rut.
Mason Jar Instant Noodle Soup
[Note: This recipe will fill up four 32oz mason jars]
Ingredients:
- 4 tsp soy sauce or tamari
- 4 tsp fresh lime juice
- 4 tsp fresh chili paste*
- 2 cup carrots
- 2 cup chopped bok choy
- 2 broccoli stems
- 1-2 green onions
- Package of quick-cooking rice noodles (divided up into four servings)*
- Block of extra firm tofu
- Cilantro for garnish
Instructions:
- Mix your soy sauce (or tamari), chili paste, and lime juice into a 32 ounce mason jar. (This is the “base” flavor for your delicious broth!)
- Cut your veggies length wise if possible, and pack them upright into your jar.
- Finish by adding your tofu, noodles and cilantro, seal up your jar and store in the fridge.
- When you’re ready to enjoy, simply add hot water (or hot veggie broth if you have a little extra time) stir, let it sit for 5-10 minutes — and enjoy!
*Omit chili paste altogether if you’re sensitive to spice.
*Be sure to use RICE vermicelli, as these don’t require boiling water to cook through.
Now, these “pho-inspired” noodles are one of my personal favorite recipes (it’s super light — yet satisfying — zesty, and packed with umami flavor).
But really, the sky’s the limit when it comes to this recipe!
So feel free to add any of your favorite veggies, proteins, and herbs to make it fit your taste buds.
For instance, a little curry powder, sliced carrot, and coconut milk makes a super delicious play on coconut curry…
Or — opt for a bit of green curry paste, bell pepper, and mushroom for a Thai-inspired lunch!
It really is a great recipe to feel inspired in the kitchen…
