Vegan Potato Recipes That Are Healthy and Delicious

Potatoes make great comfort food – but they’re also naturally vegan. However, it’s when you want to dress up those taters, that recipes start to call for ingredients like milk and cheese and eggs. If you’re looking for some delicious vegan potato recipes, read on.

Potato Basics: Vegan Mashed Potatoes, Loaded French Fries, and Baked Potatoes

So, let’s first start with some of the basics and take them for a vegan spin.

Creamy Vegan Mash

You’ll never believe this creamy, fluffy, mash has no dairy.

What You Need:
  • 4 large potatoes
  • 1 tsp extra-virgin olive oil
  • 4 Tbsp vegan butter
  • 1/4 –1/2 cup your choice of unsweetened, non-dairy milk
  • vegan potato recipes | Activated You5 cloves of garlic (roasted or sautéed for a few minutes in olive oil)
  • Fresh chives
  • Salt and pepper to taste
What To Do:
  1. Preheat the oven to 430 °F.
  2. Peel and slice the potatoes into quarters and cover in a pot with water.
  3. Bring to a boil and simmer covered for around 20-25 minutes.
  4. When the potatoes are soft, drain the water from the pot and leave the potatoes to dry.
  5. Add the vegan butter and mash with potatoes.
  6. Add your choice of milk a little at a time, slowly mashing it in.
  7. Mash in roasted garlic and season with salt and pepper.
  8. Garnish with fresh chives

Loaded French Fries

Loaded vegan fries? Yes, please. These baked french fries are far more interesting than loaded flour tortillas or tacos, and they’re gluten free. This one’s a quintessential dish for football season.

What You Need:
  • vegan potato recipes | Activated You2 cups frozen french fries, baked
  • 1 can black beans, drained and rinsed
  • 1/4 red onion, diced
  • 1/4 cup frozen corn, thawed
  • 1 green onion, chopped
  • 1 avocado, diced
  • ½ tomato, diced
  • 1 jalapeño, sliced
  • Cilantro, lime juice, and vegan ranch dressing to dress and taste
What To Do: (basically nothing)
  1. Bake fries according to their package.
  2. Place hot fries on a large platter.
  3. Top with all of the delicious ingredients listed.

Gourmet Baked Potatoes

The great thing about baked, stuffed potatoes is that there are so many toppings you can load them up with – even for vegans. This vegan dish is so filling, and even your meat-eating friends will be sold.

What You Need:
  • 2 medium russet potatoes, washed and dried
  • 2 Tbsp vegan butter
  • 1 cup steamed broccoli
  • ¼ cup vegan bacon bits
  • vegan potato recipes | Activated You½ cup vegan sour cream
  • Vegan cheese sauce (see below)
Vegan Cheese Sauce
  • ¾ cup coconut milk
  • 3 Tbsp nutritional yeast
  • 2 Tbsp tapioca flour
  • ½ tsp salt
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • Pinch of smoked paprika
  1. Place all ingredients into a saucepan and whisk with no heat.
  2. Then, bring to a boil while continuing to stir constantly.
  3. Let simmer on low for about one minute.
What To Do:
  1. Heat oven to 450 °F.
  2. Poke several holes in each potato with a fork.
  3. Microwave the potatoes on high for about 6-10 minutes until soft (flipping them halfway through).
  4. Transfer potatoes to oven and cook directly on oven rack for another 20 minutes.
  5. Remove from oven and slice an “X” in the top of each, pulling the potatoes open from this point.
  6. Mash the flesh at the top of the potato a little.
  7. Top with vegan butter, broccoli, vegan sour cream, vegan cheese sauce, vegan bacon bits, salt, and pepper.

Roasted Potatoes with Garam Masala

Garam masala is a popular (and easy) Indian spice mix that can liven up any meal with a spicy punch. Next time you roast potatoes, season with garam masala.

What You Need:
  • 2 pounds of potatoes
  • 1 Tbsp garam masala
  • 2 cloves garlic minced
  • 3 Tbsp Olive oil

  • 1 Tbsp ground cumin
  • 1 ½ tsp ground coriander
  • 1 ½ tsp ground cardamom
  • 1 ½ tsp ground black pepper
  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg
What To Do:
  1. Preheat oven to 425 °F.
  2. Slice the potatoes into half-inch round pieces.
  3. On a baking sheet, grab potatoes and toss with garam masala, garlic, and olive oil.
  4. Roast for about 20 minutes or until cooked completely through.

Note: You can also try roasting potatoes with other simple ingredients, like salt and apple cider vinegar or a teaspoon of lemon juice and fresh sprigs of rosemary.

Baked Potato Soup

Potato soup always knows how to warm up your insides. But this baked potato soup recipe is also loaded with delicious (and guilty-looking) toppings.

What You Need:
For the Baked Potatoes
  • 4 cups baby potatoes
  • 1 Tbsp olive oil
  • Salt and pepper to taste
  • For the Soup
  • 1 Tbsp extra-virgin olive oil
  • ½ onion, finely diced
  • 1 clove garlic, minced
  • ¼ tsp salt
  • vegan potato recipes | Activated You3 cups vegetable broth (if you’re making your own, use veggies like carrots, celery, and mushrooms to boost the flavor profile)
  • ⅓ cup coconut cream
For Topping
  • Chives, chopped
  • Vegan cheddar, shredded
  • Vegan bacon bits,
  • Coconut milk and olive oil to drizzle
What To Do:
  1. Preheat oven to 400 °F.
  2. In a bowl, combine baby potatoes with oil, salt, and pepper.
  3. Bake potatoes for 15 minutes. Flip. Bake for another 15 minutes (until tender).
  4. In a skillet, heat olive oil over medium-high heat. Add onion, garlic, and vegan bacon bits. Cook until tempeh is golden.
  5. In a food processor or blender, combine the veggie broth, baked potatoes, salt, and the tempeh mix until smooth.
  6. Return all of this to skillet. Add vegan cheddar, coconut milk, and chives. Heat until cheese has melted.
  7. Serve into bowls, and top with a drizzle of olive oil and coconut milk, more vegan cheddar, extra vegan bacon bits, and chives.
